I’ve always been a huge fan of shrimp. Don’t know where it comes from, I think they are just freakin delicious. They are tricky to cook though. I started out buying cooked shrimp and then cooking them with the dish, but they would always end up tough and over cooked. Maybe I was doing it wrong lol.

So I started buying raw shrimp and learned how to clean them correctly, cause no one wants shrimp poop in their dish (check recipe notes). Being able to cook them from a raw state, you have more control over how they come out and they taste much fresher.

Another thing I absolutely love is Mexican food. Now I am not 100% sure that cilantro lime rice is Mexican but its in the general vicinity. And well if you mix that with black beans and shrimp, we’ll go with it.

The amount of ingredients is minimal and oh so easy to make. The dish in total gave me three servings, so yes I actually ate this yummyness for three lunches in a row.

Now let’s talk about this mango pineapple salsa. I found this jar at my local grocery store and thought it would be a perfect addition to any tropical shrimp or fish dish. And the ingredients are just to die for, as in they are all actual food and you can pronounce all of them. Now that is fantastic. I always try to pick out pre-made food at the grocery store that has the least amount of ingredients and no weird additives or preservatives.

Pair this dish with your favorite drink, beer, whatever… My Corona light was the perfect combination with this yummy dish. Only 99 calories for the health factor.

Cilantro Lime Rice Bowl With Shrimp and a Pineapple Mango Salsa
This is so delicious and a meal you can eat for several days in a row...Cilantro Lime Rice with black beans and shrimp marinated in lime juice. So simple, but the flavors are so enhanced by the pineapple mango salsa that it's not missing any seasoning.

Instructions
Cook white rice
  1. Boil 2 cups water
  2. Add 1 cup uncooked rice to pot and stir for a minute
  3. Reduce temperature to simmer
  4. Cover pot until rice cooks through
  5. Remove from heat
  6. Mix in Cilantro and juice of 1 lime
  7. Set aside
Shrimp
  1. Peel Raw Shrimp
  2. Season with salt and pepper to taste
  3. Add juice of 1 lime and marinate for at least 5 minutes
  4. Spray pan with any kind of cooking spray (I used Avocado oil)
  5. Saute shrimp on all sides until pink and not opaque
Black beans
  1. Open can of black beans and empty into small pot with liquid
  2. Cook until the liquid starts to boil and beans are heated through
Put it all together
  1. Grab your favorite bowl
  2. Layer with Cilantro lime rice on the bottom
  3. Followed by as many black beans as you want
  4. Then a few yummy shrimp
  5. And top it all off with 2 Tbls of the pineapple mango salsa (or more)
  6. Devour in 5 minutes and lick the bowl clean
Recipe Notes
  • When peeling the raw shrimp, make sure you clean the back of them where they split. That brown / green liquidy string. That's poop. you're gonna wanna take that out. I just squeeze it out and wipe with a paper towel.
