I literally just pulled this recipe out of my bum you guys… hahaha. Well not literally, cause that would be gross and probably not the best way to start a recipe post. I’m a little unconventional.
Scouring the fridge for something to munch on, I found some So Delicious yogurt containers in the back of the fridge, one of which expired a few days ago. Yup that’s just how this mom rolls. First I thought of just throwing some granola on top and forcing it down my throat, especially since it was the unsweetened kind. Then I decided to hit up Pinterest for a possible recipe I can incorporate it in.
Somehow I stumbled onto smoothies, and sudden inspiration (or madness) led me to open up the fridge and see what else I need to eat before it really expires like beyond the point of no return. I found the last bit of a bag of baby spinach and an untouched container of blueberries, on the counter i found some near death bananas and went to work. The rest just started coming together.
A lot of the smoothie recipes required the bananas to be frozen (for smoothie thickness I guess) but here I was, with a soft warm banana and a broken Ice machine. I made due with adding less milk (1/2 cup compared to the usual 1 cup I saw) and hoped the yogurt would create the correct smoothie thickness.
Then I realized there was no sweet factor, and decided to open up this really cool maple syrup that my husband just bought and toss a little bit of my Plant Fusion vegan vanilla protein powder I usually mix with Almond milk after workouts.
I looked at the blender and thought – Not too shabby. Fingers crossed this tastes good.
Oh.M.Goodness ! I have never made a more delicious smoothie in my life! And there were a lot of attempts made. It may not seem super delicious with it’s bluish green color but trust me… it tastes much better than it looks.
