Perfect for those nights when you don’t really feel like cooking but still need a home-cooked meal that doesn’t consist of fruit and cereal. But also a dinner that tastes like takeout, actually, it tasted much better than takeout. Especially since I know exactly what when into it and how it was cooked. Yeah, I’m one of those people lol.

Doesn’t that look mouth wateringly delicious? I was honestly quite surprised by how good it came out since I was literally just throwing stuff together because I thought the combination would taste good. Turns out I have a pretty good pallet.

I started off by sauteing the zucchini and mushrooms in a bit of olive oil and vegetable seasoning, once they were grilled looking enough, i added the garlic. Usually in recipes it goes in first, but I always end up burning it somehow. So I add it at the end and the garlic still keeps its flavor.

Once the the veggie mixture and garlic got a nice color, I added the green spaghetti noodles and sauteed together for a couple of minutes. The peanuts went in after I already moved the dish to a bowl. That’s it.

My daughter didn’t finish her bread from lunch, and my son refused to eat the mini bow-tie pasta he begged for cause he “doesn’t like it”🤦. But you know what, I got wine!!!

Easy Weeknight Dinner: Garlic Zucchini, Mushroom & Peanut Noodles

Instructions
  1. Warm olive oil in pan
  2. Add zucchini and mushrooms
  3. Saute until they are browned to taste
  4. Add garlic
  5. saute until garlic is browned
  6. Add pre-cooked green noodles
  7. Continue sauteing until the noodles are warmed and mixed in
  8. Transfer to a bowl
  9. Add peanuts, and enjoy!!!
Recipe Notes

I think the only thing that would improve this recipe is using peanut oil or sesame oil instead of the olive oil. Will definitely try that next time, but honestly it was delicious with good ole olive oil as well.
